Baingan Bhartha Quesedillas

This BAINGAN Mexican/Desi Fusion recipe will be your new favorite go-to. Quesadillas are a great way to integrate vegetables, protein and whatever else is in your fridge into an easy and quick meal. All you need is a few tortillas, our Baingan Bharta, and cheese and you can customize this by adding more fresh vegetables or additional protein like tofu and chickpeas! Try out this delicious mouthwatering fusion meal with our Pav Bhaji or Dal Makhani too!

Ingredients

  • 2-4 Tortillas or Rotis
  • Our Bhaingan Bharta meal kit
  • Any mixed veggies (peppers, onions)
  • Cheese!

Recipe

  1. Prep Ingredients: Chop any veggies you want to add in. 
  2. Make The Sauce: Cook the Baingan Bharta according to instructions, all you need is hot water and 5 min
  3. Season Veggies: Sauté chopped veggies in a pan with a little salt and put aside
  4. Prep Tortilla: Warm up your first tortilla on a buttered/oiled pan
  5. Fill Quesadilla: Place the Baingan Bharta flattened onto the tortilla and sprinkle in veggies and lots of cheese!
  6. Place a second tortilla on top and press down 
  7. Flip the quesadilla to let the second tortilla warm up 
  8. Finish Quesadilla: Eat your quesadilla with whatever sides you want like salsa, chutney, or guacamole!
